Egg Muffins (C1)
"Easy peasy, quick and easy" as the saying goes! Thanks Becky!
12-14 eggs
1 lbs homemade sausage
1/2 to 3/4 cup onion
1/2 to 3/4 cup diced peppers
about 1 cup shredded cheese
(Or anything you like in your omelets.)
Mix well
Spray muffin tins well with non stick spray.
Bake 350 for 25-30 min or until tops are firm.
Let them cool, then remove from tins (may have to use knife around edges) and place in tupperware in fridge...when ready to eat just reheat in microwave for 20-45seconds.

I made it with:
9 large eggs
About 1/2 lb of mixed 99%/93% Jenny O Ground turkey with a bunch of seasonings (including a lil bit of salsa)
Minced onions (dried)
1/2 cup diced sweet bell peppers
1 cup chopped mushrooms
The nutritional information with the version that I made is as follows for 1 of 14 muffins:
91 calories
5 grams fat
9 grams protein
1 gram carb
1 gram sugar
