WIAW: Giveaway and Actually (kind of) following instructions, for once...

With the hectic of exams this week (and going home for a little surgery next week - I'm okay!) I don't have a ton of photos for y'all today. Not even close to a day's worth (never mind the fact that the ones I do have are from different days)

But quality over quantity? This may just be the first time that I'm actually following the WIAW theme.

Except, err, the one from last month... that counts, right?

*Sheepish grin.*

Peas and Crayons

So I'm a little late. Still, these green eats were tasty!


I don't make roasted eggplants very often, but when I do make them, I wonder why I don't more often! They're so good, especially with marinara and roasted onions!

Another oh-so-good thing?


Homemade French Fries. Paired with a homemade black bean burger.



A little too time consuming for me to make daily, but so worth it when I have a little extra time on my hands (or decide to give myself that extra time)!

And now that it's April, I'm 20 (happy birthday to me! It was Saturday), and it's warming up to feel more like spring, green smoothies are baaa-aaaaack!

Okay, one of those facts may have been irrelevant...

But still.


Fruity, sweet, frothy, YUM. 

But life is all about the balance. You can't just have the green stuff, as delicious as it may be.


So we'll balance this post out with some yummy new toffee that I tried!

Enstrom Candies makes a 'world-famous' milk chocolate almond toffee and, having the sweet tooth that I do, I couldn't wait to try it!



Wow. I'm a little skeptical of anything that toots its own horn so loudly as to call itself 'world-famous,' but this was good. Imagine the taste of luxury.

This is it.

Even if you're sitting in your dorm room or cramped apartment, eating a piece of this toffee makes you feel like you're sitting in the Ritz in Dubai (is there one there?). It's crunchy toffee with big chunks of almond, coated in a little milk chocolate and covered in generous ground almond powder.

So sweet, so flavorful, soooo good.


The only downsides are that it's a bit of a mess to eat - the almond powder got everywhere. This probably isn't something you want to share with a little kid before they need to go anywhere.

That's okay, as  you won't want to share, anyway. The mess doesn't matter at all as soon as you take a mess. It's so rich, smooth, and delightfully crunchy!

But don't just listen to me rave.

Since I fell short a bit on the photos this week, hopefully I can make it up to y'all with a giveaway! One of my readers will get their own one pound box of the toffee!
