A Simply Organic Baking Day

YAAAAAAAAAY! It's Christmas Eve!!!!!

Christmas Eve is definitely one of my favorite days of the year. It's a really close call choosing between Christmas Eve and Christmas, since Christmas Eve still has the gleeful anticipation but Christmas is The Real Deal.

Anyway, most of us are probably sorting out last minute gifts, watching Christmas movies with loved ones, enjoying hot chocolate by a roaring fire, and baking up a plateful of Christmas cookies.

But you've seen enough cookie baking here, and elsewhere, in the blogosphere. So if you feel like mixing it up, here's a quick-and-easy baking mix review of Simply Organic baking mixes - it's whole wheat carrot cake and chai spice scones!



We were most excited to try the carrot cake.



It was super easy to whip up - just add some wet ingredients, your grated carrots, and mix it all up! Then off into the oven it goes. So far, so great.

But then...



...so the cake was not nice and big and fluffy, like we had expected, at all. It was dense and way too sweet. I have a CRAZY sweet tooth and you'll only hear me complaining about something being too sweet once in a blue moon, but this cake?

Too sweet.

You could barely taste anything else in the cake, neither the grated carrots nor the nice whole grains I'd been so looking forward to, because of the sweetness! I'm sorry, but the cake was a bit of a disaster in my books.

So we weren't expecting much with the scones.


But we were wrong! They were just as easy to whip up, but they also tasted AMAZING.

They're light, fluffy, delightfully spiced - it made for a delightful exotic breakfast when paired with a dollop of jam and clotted cream, as well as a piping hot mug of tea or coffee!


I mean look at those beauties - aren't they beautiful? They're crispy on the outside, soft on the inside. They're very gingery (but not overwhelmingly so), but taste homemade and even my picky 6-year-old sister loved them!

You'll want to eat them straight out of the oven :)


They're best fresh, though that really wasn't a problem - we ate the first batch all up before they'd even completely cooled. These completely made up for the carrot cake disappointment!

Oh, and there's a vegan option for you vegan kiddies! 

Yes, yes try these scones right away :)
