It's easy to make this recipe vegan - it just depends on what chocolate chips and milk you choose! I chose vegan chocolate chips from TJ's and chocolate soymilk :)
Chocolate Toasted Lentils
* 2.5 cup lentils, uncooked
* Chocolate Soymilk (or chocolate almond milk or other chocolate milk), to soak
* A pinch of salt
* 1/2 cup chocolate chips
1) Soak the lentils in the chocolate soymilk for 4 to 8 hours, covered. Do NOT substitute water, or you won't get the full chocolate flavor.
2) Drain the extra soymilk, spread the lentils on a baking sheet (try to have them pretty spread out - the less overlap the is, the crunchier they will be).
3) Sprinkle on the chocolate chips and salt, mixing it all up.
4) Bake at 400F for about 30 minutes, stirring once or twice with a metal spatula mid-way through.
To serve, pour them over ice cream, yogurt, cereal as a crunchy extra topping - and don't forget the nut butter.
They go great with some creamy nut butter :)
These only lasted a few days in my apartment, but I still recommend storing them in a tupperware container in the fridge - jut to be safe.
