The Most Amazing Lemon Bars Everrr (a.k.a. The Quarterrr Bars)

No, but seriously.

And yes, three 'r's are necessary.

Even in their 'The Quarterrr Bars form.' Because how cool is it to have a recipe where almost every ingredient is a quarter of something? That's just awesome, it makes it so easy to memorize!

The Most Amazing Lemon Bars Everrr
a.k.a. The Quarterrr Bars

So good that someone *shifty eyes* took a bite before she took a picture
Base:
* 1/4 c. all purpose flour
* 1/4 c. black bean flour
* 1/4 c. powdered sugar
* 1/4 tsp. salt
*1/4 c.. butter (can be non-dairy, or you can use coconut oil, if you want them to be vegan - I used vegan margarine)
* 1 Tbsp. milk (can be nondairy, if you want them to be vegan - I used soymilk)

Topping:
* The juice of one lemon
* The zest of one lemon
* 1/4 c. powdered sugar
* 20 drops of lemon NuStevia
* 5/4 c. lite tofu






Instructions:


1) Preheat oven to 350F.

2) Mix the base ingredients well.

3) Grease a baking tray, press the base into a nice even layer on it (about 8X8). It's like playing Play-Doh!

4) Bake for thirteen minutes, while combining all of the topping ingredients in a food processor/vitamix.

5) Pour the topping on the half-baked base in an even layer.

6) Bake for an additional 25 to 30 minutes.

7) After cooling and cutting (the recipe makes 8 squares), put the bars in the freezer. They're best served semi-frozen, trust me! I don't know what it is, but they're just amaaaaaazing when they're really cold. So creamy and decadent and fantastic.


 Le sigh. Now I want to make some more!
